Mangia Monday: Quick and Healthy Chicken Enchiladas Recipe

May 23, 2016

Easy Chicken Enchiladas Recipe, Healthy Dinner recipe, pregnancy recipes

My husband made this recipe when we were first married. It is now a staple in our home because it’s extremely quick and easy to make AND It. Is. Delicious! Once again, a perfect for a week night meal. If he can do it, so can you…Love ya, honey!

Quick and Healthy Chicken Enchiladas

*Makes 1 9×13 pan of enchiladas – serves 4-5
1 Rotisserie Chicken
1 can Red Enchilada Sauce (14 oz can is plenty, I use Medium heat)
10 Corn Tortillas
Shredded Cheddar Cheese
Canned or Frozen Corn
Black Beans
Cumin
Garlic Salt
Dried Oregano
Shredded Lettuce
TOPPINGS: salsa, sour cream, taco sauce, etc.

  1. Shred the meat from the rotisserie chicken and place in a bowl.
  2. Spray your 9×13 pan. Heat oven to 400 degrees.
  3. Create your assembly line: line up a bowl of shredded cheese, a bowl chicken, and a bowl of enchilada sauce. Dip a tortilla in the enchilada sauce. Add chicken and cheese, and roll up the tortilla placing it seam side down in oven pan.
  4. Continue dipping, filling, and rolling tortillas until pan is full (about 10 enchiladas).
  5. Pour the remainder of the enchilada sauce over the rolled tortillas. Sprinkle more cheddar cheese on top.
  6. Cover pan with tin foil, and bake for 10 minutes. Take off foil, and continue to bake for another 10 minutes – or until the tortillas and cheese get a little crispy.
  7. While tortillas are warming, heat up the black beans (sprinkled with garlic salt, ground cumin, and dried oregano to taste) and the corn. Shred the lettuce.
  8. Serve enchiladas with corn, beans, and lettuce on top. Add any extras – sour cream, salsa, taco sauce, your pick!

How Writing Helped Me Stay Sane for 40 Weeks of Pregnancy

May 17, 2016

Pregnancy tips, positive pregnancy, pregnancy problems, writing while pregnant

Every single person on this earth has a talent. Some innate part of ourselves that makes us excited to get up in the morning – that we’d gladly put in 80 hours a week toward because it doesn’t feel like work. If we do what we love, it doesn’t feel like work. Isn’t that the saying?

I believe these talents can transform as we get older. Forbes.com came out with an article that said millennials could have up to 20 different careers over the course of our working lives. [http://www.forbes.com/sites/jeannemeister/2012/08/14/job-hopping-is-the-new-normal-for-millennials-three-ways-to-prevent-a-human-resource-nightmare/] I can’t decide if that statistic is inspiring or exhausting. I guess I’ll choose to find hope in it as I’m one millennial who has had a few different careers in her life already. There is a theme to them all however. That theme is Creativity. I am a creative person. A singer, a performer, an artist, a songwriter – I’ve finally come to terms with the fact that true happiness is when I am being creative.

Pregnancy books, best pregnancy books, journaling pregnancy

Moving forward to the 40 (plus!) weeks of pregnancy, let’s just say I didn’t feel creative during that time. Which is odd because growing a child from nothing but love is honestly the most creative thing a woman can do, don’t you think? Regardless, I’d heard about postpartum depression, but I had no term to describe this prenatal fog. This suppressed feeling that seemed to surround the nine rather long months. And women don’t talk about it. Pregnancy is the most magical gift given to us, and it is hard – almost taboo – to talk about the negative sides to it. Believe me, it wasn’t until that glorious little girl was put in my arms for the first time that I literally felt the fog suddenly lift and leave me with an enormous sense of relief. Heavy stuff that was finally being released.

Whether you’ve felt that suppression or not, it is still a colossal transformation we go through bringing a child into the world. And my creative outlet, my salvation, became writing. I am a firm believer in getting out of bed 15 minutes earlier than you normally would in the morning and spending that time by yourself writing.

This writing will become a clearing of the cobwebs – if you will – to get motivated to start your day. It brings a clean slate to your day. Sometimes these morning writings are to-do lists, or a “Dear Diary”, or maybe nothing but simply writing “I don’t know what to say” over and over for three pages. Hey, not every day can be a study in inspiration. The important thing is that you write. I learned this habit from The Artist’s Way, by Julia Cameron. And while I’d heard about books and genius ideas coming out of this practice, I truly didn’t believe it until it happened to me.

It was maybe five months into my pregnancy (or 18 weeks pregnant – but who is counting?!) that I saw the pattern emerge. I was not writing “Dear Diaries” or to-do lists in those first 15 minutes. I was suddenly writing inspirations, meditations, soul sessions to help myself be truly mindful during that challenging time. And just like that (plus some blood, sweat, and tears), a new dream was born. The Daily Soul Sessions for the Pregnant Mama became real, became tangible, became a book.

Here are some lessons I learned by writing every day – Your “Pregnancy Writing Tips” to get you through 1 week of pregnancy through 41 weeks of pregnancy!

Pregnancy Writing Tips and Encouragement:

  • Do it. Write. Everyday. Journal your thoughts onto a piece of paper and watch ideas, entrepreneurial thoughts, undiscovered dreams emerge.
  • Don’t be distracted or turned away at the beginning. Like everything writing is a muscle that has to be worked and strengthened.
  • It’s okay to suck once in awhile (slash most of the time). You have to get the bad thoughts out in order to get to the good ones.
  • Find your talent. Find your creativity. And then follow it! It will lead to a surprising, fulfilling, and purposeful life. We are only here for a short time – you MUST make the most of it.
  • Do not be afraid of putting yourself out there. Do not worry about what the world thinks of your newest dream. Deep down everyone simply admires those that go after what they want with courage and without apology.
  • You will be amazed at the changes your life will go through when you write. I promise, you will be amazed at what dreams will come.

Soothe Your Soul and Style with PinkBlush Maternity and Essential Oils!

April 27, 2016

Maternity clothes, bump style, pregnancy tips, healthy pregnancy

Isn’t it fun when things just come together to work out in the most awesome way? The perfect song plays at just the moment you need it, a friend checks in right when you think of her, the kids all go to bed at the same time – you know – the important stuff. I had recently been pinteresting some new cute maternity clothes for expecting mamas, and I came across the most inspiring website… Are you ready for it?

Mamas. Have you checked out PinkBlush Maternity yet? If not, stop reading this post immediately and Check. Them. Out. I asked my sisters if they had seen their clothes, and Kate informed me we were actually going to collaborate with them on our upcoming photo shoot for The Daily Soul Sessions!

Cue everything coming together to work out in the most awesome way.

I don’t know about you, but there are few things in life that stress me out more than coming up with color and style schemes for a multi person photo shoot. Even after all those years on the road touring and putting together photo shoots – it still wears me out! But the awesome peeps at PinkBlush hooked us up with pops of spring and dashes of style! I am in love with their clothes – and the best part?? The best part is that a majority of their materials, fits, and styles work for prenatal, post natal, before you’re preggo, during those crazy nine months – whenever!

Check out these three looks. The mint and navy maxi dress that I (Kacey) have on will serve me for many of the first months of pregnancy (it’s actually a maternity maxi dress!) – whenever that time comes again. Kate’s adorable coral tribal print dress is fantastic with a skinny belt, but also perfectly free flowing to show off a someday baby bump! And Kara’s Aqua Abstract Kimono is delightfully colorful and can work at any stage of your stylish life! We are so excited to share the awesome maternity clothes/non-maternity clothes from PinkBlushMaternity with y’all!

Maternity clothes, bump style, pregnancy tips, healthy pregnancy

Anyhoo. We had the pleasure of creating our first Daily Soul Sessions photo shoot with the lovely and talented Sarah Guibord a couple of weeks ago when we were back home in Colorado. I love essential oils and am just starting to turn Kara into a huge fan. It’s just how sisterly peer pressure works:) We needed some different concepts for the photo shoot, so Kate and I decided to teach Kara how to make a few of my favorite and simple Oil Blends for rollerballs and room sprays. Favorite because they smell delicious and are extremely therapeutic. Simple because the oils we used almost all come with any starter kit you choose to begin with.

Between the clothes, the babes running around in the background, and the essential oils this photo shoot turned out great! We’ll share more photos soon, but for now I want to leave you with a couple Essential Oils recipes, friends.

De-stress Rollerball Recipe
using these 10mL dark amber glass roller
10 drops Frankincense
10 drops Lavender
10 drops Panaway (substitute Peppermint)
Fill 3/4 with your favorite carrier oil (I like this Fractionated Coconut Oil)
*Frankincense is also known for it’s Anti Aging properties*
Add a dap to those fine lines and watch them start to disappear guys!

Purify Room Spray or Linen Spray
using these 2oz dark amber glass spray bottle
10 drops Lavender
10 drops Purification.
Then add 2/3 Distilled Water and 1/3 Witch Hazel (substitute Alcohol)
Spritz to purify room or on bed linens for freshening!

So nature walks were one of our favorite activities while we were there! Oh, that and playing with all of their older cousin’s toys. Cuz that went over swimmingly 🙂

Go gather some leaves and sticks today! See if any flowers are blooming yet? Pick out shapes in the clouds…have fun, mamas!

Cheers!

“Oh The Places You’ll Go!” Baby Shower

March 22, 2016

Oh The Places You'll Go Baby Shower, baby boy shower decor

We were absolutely honored to host one of our dearest friend’s baby showers over the weekend! The  slight “Oh The Places He’ll Go!” theme was reflected on the invitation and on the “vintage” postcards we found on Zazzle. Each postcard reflected a place my friend and her husband had traveled to, and on the back we wrote our hopes for this new baby boy!

The gorgeous poppies were found at Whole Foods. One of our co-hosts arranged them all. They. Were. Stunning! I’m convinced she has a new calling as a florist.

We were able to put together an entirely gluten free menu (minus the scones!) for the Mama-to-be. Absolutely delicious bites from Huckleberry Cafe in Santa Monica.

In lieu of a game, we did “Midnight Diapers” – you order a bunch of newborn and size 1 diapers and everyone writes words of encouragement or a funny joke on the butt. Even the boys got into this one!
