Tortellini Pasta Salad recipe, healthy recipes, easy dinner to make

Tortellini Pasta Salad

1 family sized package of cheese tortellini
1 red bell pepper chopped or small jar of peppadew peppers chopped
Handful of basil chopped (use amount to your liking)
Italian or Greek Salad Dressing
parmesan cheese or feta crumbles
OPTIONAL: Salami chopped (non-pregnant mamas, only!)

1.) Boil the tortellini according to package instructions, and while that is cooking away, chop up all peppers, basil and salami.

2.) Grate parmesan cheese.

3.) When the tortellini is finished boiling, drain in a colander, and then run cold water over them until pasta has cooled off. You can also place in refrigerator instead. If you do that, drizzle a little dressing over noodles so they don’t stick!

4.) Place tortellini in a bowl and add in peppers, basil and Salami. Add the salad dressing to your liking, and mix all together. Top with parmesan cheese before serving, and you are ready to go! I like to place mine in the fridge for a bit so all the flavors blend together. Makes for a yummy spring and summer side dish!

– Halve some cherry tomatoes and sautee up with the bell peppers for some extra warmth and yumminess!
– Add a can of chickpeas/garbanzo beans
