‘Tis the season for bone broth!

Bone broth is literally like the nectar of the gods! It is so delicious, so healthy, and SO easy to make. I purchased an organic rotisserie chicken yesterday – to use on salads for lunch this week and also to start my 9 month old on finger foods. (Side note, HOW ON EARTH IS HE ALREADY OLD ENOUGH FOR THIS?).

Anyway, I was about to throw out the bones when it hit me – I hadn’t made bone broth in awhile, and we all love it. We drink a cup of it in the morning or use it for tortilla soup. You automatically feel healthier after drinking it đŸ™‚

Easy Bone Broth Recipe

Ingredients:
Carcass of chicken or turkey or other meat bones (organic is best!)
2 tbsp apple cider vinegar or lemon juice
1-2 onions
3-4 celery stalks
3-4 carrots
Salt and Peppercorns
Optional:
other veggies
Garlic cloves
parsley and other herbs

Place bones in a big soup pot. Cover with cold water. Pour on the vinegar or lemon juice. This helps extract all of the good stuff from the bones. Toss in the rest of the ingredients (very roughly halve or chop the veggies). Bring water to a boil and add the salt and pepper and any other herbs you want to use. Bring down to a simmer. Let simmer for 12-24 hours. Strain all bones and vegetables out of broth. Drink up! Or use to make soups or rice, etc. Broth will keep in refrigerator for 5 days. After that, freeze any left over broth.

This is awesome to start after Thanksgiving…throw all the left over bones into a pot, and any vegetables not used. Simmer all night and you have a delicious and healthy broth the next day.
