Easy Healthy Salad For Lunch

My dear friend Ashley made this salad for us one day when we were rehearsing at the house, and I could not believe how quick it was to make and how DELICIOUS it was! I now (literally) eat this salad almost every day. YUM! And honestly, when she first added beets to this, I thought to myself – um no. I’ll just eat around those! But they are the perfect addition to this salad! Try it! I love them now!

Easy, Quick Salad For Lunch
Pre-washed mixed greens
Rotisserie chicken
Feta cheese (Trader Joe’s brand with the yellow sticker is THE best)
Red bell pepper
Pre-cooked beets (find in veggie section in any grocery store)
salt and pepper
Extra virgin olive oil
red wine vinegar
balsamic vinegar (I love a pomegranate flavored one)

Making this salad is a breeze; just toss some pre-washed greens in a bowl and add your chopped pepper, pulled chicken, crumbled cheese, diced avocado, and chopped beets. Then season with salt and pepper, and drizzle your oils and vinegars on top.

Feel free to add any other veggies or toppings you have laying in your fridge. I’ll add leftover quinoa if I have it or mushrooms…apples add a sweet touch to it as well!
