We spent a wonderful Easter weekend in Denver with family. How was your weekend? The girls LOVED the snow! Coming from Southern California, they don’t get to see it very much 🙂

So nature walks were one of our favorite activities while we were there! Oh, that and playing with all of their older cousin’s toys. Cuz that went over swimmingly 🙂

New Family Friendly Yoga Studio in El Segundo, CA

We are SO EXCITED about the opening of a new yoga studio in El Segundo – Happy Baby! It’s a family yoga + Wellness studio…all for families, and kiddos, and mamas-to-be. Happy Baby focuses on prenatal, postnatal + parent-child programs, education + support with yoga and pilates. It’s so much fun!

We are also beyond ourselves because they carry The Daily Soul Sessions for the Pregnant Mama there too! We took the girls there last week for the luanch party – it was a blast! Please, Southbay Mamas, go check out Happy Baby! We will see you there 🙂

“Oh The Places You’ll Go!” Baby Shower

We were absolutely honored to host one of our dearest friend’s baby showers over the weekend! The  slight “Oh The Places He’ll Go!” theme was reflected on the invitation and on the “vintage” postcards we found on Zazzle. Each postcard reflected a place my friend and her husband had traveled to, and on the back we wrote our hopes for this new baby boy!

The gorgeous poppies were found at Whole Foods. One of our co-hosts arranged them all. They. Were. Stunning! I’m convinced she has a new calling as a florist.

We were able to put together an entirely gluten free menu (minus the scones!) for the Mama-to-be. Absolutely delicious bites from Huckleberry Cafe in Santa Monica.

In lieu of a game, we did “Midnight Diapers” – you order a bunch of newborn and size 1 diapers and everyone writes words of encouragement or a funny joke on the butt. Even the boys got into this one!

Deviled Eggs Recipe

With Easter almost here, it’s the season of Deviled Eggs! These are so delicious and so easy…you can’t mess them up, and everyone will devour them. Enjoy!

Easy Peel Hard Boiled Eggs

Place eggs in pot large enough so eggs can sit in one layer. Cover eggs by at least an inch with cool to room temperature water. Bring water to a boil. Let water boil for 2-3 minutes. Then turn off heat. Cover the pot and let the eggs sit in the water for 13 more minutes. When 13 minutes are up, dump out hot water and immediately cover eggs with cold water again. Let eggs cool in water. Refrigerate immediately, or peel to make Deviled Eggs!

Delicious Deviled Eggs

1 dozen eggs
Yellow Mustard
Mayo
Ranch Dressing
Italian Salad Dressing (optional)
Paprika

1.) Hard boil 12 eggs. Once cool, peel all the eggs.
2.) Gently slice the eggs in half lengthwise. Scoop out the yoke, and set aside in a bowl.
3.) Add to yokes 2 heaping tablespoons of Yellow Mustard, 2 heaping tablespoons of Light Mayo, 1 heaping tablespoon of Light Ranch Dressing, and a splash of Italian Salad Dressing (optional). Mix together.
4.) Spoon the mixture into a small plastic Ziploc bag. With scissors, snip off a small corner of the bag. Squeeze the deviled egg mix into each waiting egg half.
5.) Sprinkle with Paprika.

However, since having kids, I find I’m not quite as …’involved’ shall we say? So lately, I’ve been just rummaging through the house and choosing things I already have lying around…check out this years table!

Gals, meet my favorite salad – The Tuscan Panzanella! I literally made this 2 times last week. Once when I had a playdate with a couple mama friends, and the next for dinner because my husband also loves this one and requested it!


Tuscan Panzanella Salad – serves 6

1 cucumber, seeded and chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 pint cherry tomatoes, halved
1/2 cup kalamata olives, halved
8 oz feta cheese, chopped
1/2 red onion, sliced
**Homemade Croutons (recipe below)**

Dressing
2 garlic cloves, minced
1 tsp dried oregano
1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
1/2 tsp dijon mustard
1 tsp salt
pepper to taste

1.) While the croutons are toasting, begin to chop up all the vegetables, cheese, and olives.
2.) Whisk all of the dressing ingredients together.
3.) Pour dressing over salad and toss.
4.) Add in toasted croutons and mix together. Serve immediately or cover and put in fridge.

Homemade Croutons

Loaf of bread (any kind) – torn or cut into small bite-sized pieces
Extra Virgin olive oil
salt

Drizzle a good amount of olive oil in pan. Toss in the torn bread and sprinkle liberally with salt. Saute bread at med-high heat until well toasted. Add more olive oil and salt to taste.
