The cooler temperatures that typically accompany fall, also bring the end of our bountiful garden season. We have an abundance of beautiful tomatoes that are begging to be enjoyed, and what better way to do that than to fix a Caprese salad. It is so easy to make and a deliciously filling and healthy meal.
-3 or 4 medium tomatoes
-1 ball of fresh mozzarella cheese from your local market (homemade is even better-but who has time for that?!)
-small bunch of basil (15-20 large leaves)
– olive oil
– Balsamic vinegar
– Salt and Pepper
Slice tomatoes to desired thickness. Slice mozzarella and chop basil leaves.
Lay tomatoes out on a platter and top with mozzarella, and continue doing so until all tomato slices are covered with a slice of cheese. Next sprinkle chopped basil evenly on top. Then generously drizzle olive oil, followed by balsamic vinegar over the salad. Top with salt and pepper-and then enjoy!
