The cooler temperatures that typically accompany fall, also bring the end of our bountiful garden season. We have an abundance of beautiful tomatoes that are begging to be enjoyed, and what better way to do that than to fix a Caprese salad. It is so easy to make and a deliciously filling and healthy meal.

Caprese Salad:

-3 or 4 medium tomatoes
-1 ball of fresh mozzarella cheese from your local market (homemade is even better-but who has time for that?!)
-small bunch of basil (15-20 large leaves)
– olive oil
– Balsamic vinegar
– Salt and Pepper

Slice tomatoes to desired thickness. Slice mozzarella and chop basil leaves.

Lay tomatoes out on a platter and top with mozzarella, and continue doing so until all tomato slices are covered with a slice of cheese. Next sprinkle chopped basil evenly on top. Then generously drizzle olive oil, followed by balsamic vinegar over the salad. Top with salt and pepper-and then enjoy!

I found myself intrigued and slightly uncomfortable when I came across this today. Life is not perfect. We are not perfect. And the older I get, I realize it’s the moments of stress, conflict, misunderstanding that have the potential to do the most damage to my carefully balanced world. I’m constantly trying to navigate these moments as gracefully as I can. And truly, after you’re through, you are stronger. In some way you are wiser, stronger, and more capable of handling the next challenge. Whether it’s a fight with the husband, work problems, exhausted mommy syndrome…whatever! – the down swing will pass. It’s just our job to stay as sane as possible until it does.

The goal is to live in the light. But trying to be more comfortable in the dark helps us to get there.
